Flavour and spiciness from pepper

CO2 extraction offers the unique possibility of fractional extraction of essential pepper oil and the spicy substance piperine from peppercorns in only one process step by means of gradual decompression. The totally differing essences can be used reliably for standardization and manufacture of products with the consistently identical taste and the same spectrum of ingredients.
